In France for example, for a cover used by a well known book editor, you'll range around 300 to 500 euros for life time using. For big international companies and huge visibility commercial advertising, I'll could range it between 6000 to 12000 euros, depending on media used.
In case of you can't find an agreement, you need to go further with the lawyer, and request your action costs to be paid by the University also, otherwise you'll spend more working on it that gaining anything from it.

I use now Neopan from FUJI, previously it was KODAK Tri-X and all T-Max ISO.
I used a lot AGFA Rodinal for both films and papers, but now KODAK D-76 at 1+1 with ILFORD fixer at 20°C is perfect for me.
I think personally that using always the same products help you to better to do repetitive works and forget the technical part
needed to always re-check when you change permanently. I do development, but I prefer spending my time outside in light rather than

I always tell watching things differently, make a composition using borders, centers, diagonals, 3/3 approach, brings something not usual to the situation. Pay also attention of things in background, as electric poles, advertising, most of time we focalize on the subject, but not as much as needed on all things around. They are also VERY IMPORTANT for the picture. You need to track the shot, don't wait for him to come, move, walk, search, imagine, build it in your mind before shooting.
